Winter squash hash. How's month 1 of your resolution going? Try a winter squash hash that'll appease your craving and your diet. You'll need:
- 3 cups of diced of Winter Squash
- 4 slices of Bacon
- 1 clove of Minced Garlic
- 1 bunch of Chopped Kale
- 1/4 cup of Water
- 1 tablespoon of Balsamic Vinegar
In a large skillet over medium heat, sauté the bacon. When the bacon fat has rendered and the bacon is crispy, remove, chop, and set aside. In the same skillet, add in the squash and garlic. Cook until tender. Add in the kale, water, and balsamic vinegar. When the water has absorbed, add in the bacon and transfer to a serving dish. Top with a poached egg and garnish with parsley before serving. Add in different ingredients to truly make it your own.
