Pistachio Nut Butter
I was recently at a farmers market and tasted pistachio nut butter. I may have officially found my favorite snack food! To make pistachio nut butter all you need is your fabulous food processor and some pre-shelled pistachios. To start, blanch the pistachios; this means boil about 2 cups of shelled and peeled pistachios for one to two minutes then shock them in ice-cold water. Place the blanched pistachios in the food processor and add ¼ cup hot water to start. Process until smooth. You may need to add more hot water to get the butter to the consistency you want. Season the butter with a few pinches of salt and a few tablespoons of sugar if you desire sweeter nut butter. If you don’t want to make your own pistachio butter, buy some fresh at the farmer’s market.
