Keeping fit for swimsuit season? One of the greatest challenges that we all face in the quest to eat healthier is the urge to snack. Here’s a recipe for a delicious white bean dip that will leave you satisfied and without guilt. Combine a 15-ounce can of cannelini beans or white beans with juices and 2 cloves of garlic in your food processor to start. Then add the juice of one lemon and ¼ cup olive oil to the mixture. Process until smooth and season with salt and pepper. This yummy dip is wonderful with carrots and cucumbers or baked pita chips. It is high in protein and fiber yet low in fat and it certainly satisfies the need to snack. Once you master this recipe you can jazz it up to suit your taste. Add chili flakes and rosemary, or even cilantro and cumin. Try with Plozner 2007 Pinot Grigio from Friuli-- it's smooth, fresh and bright with minerals and spice ($18).
