Try turkey hash. To serve 4 people you'll need 3 cups of turkey diced. Chop an onion finely and sauté it in butter until transparent. Add 2 cloves of minced garlic and 3 tablespoons of green or red bell pepper, finely chopped. When the vegetables begin to brown, add the turkey and up to 2 cups of leftover stuffing or potatoes. Toss until well blended. Now, get creative! Salt and pepper to taste, add chopped almonds or walnuts, pitted black olives, chopped parsley, seasonings such as chili powder, cumin, sherry or grated cheese. A good way to finish this hash is to mix 3 well beaten eggs with a half cup of grated parmesan cheese and 3 tablespoons of chopped parsley then pour the mixture over the hash and brown under the broiler.
