Angels' Share
As wine ages, a small amount of liquid evaporates from the barrels and tanks over time. The wine lost during this process is known affectionately as the Angels’ Share. Los Angeles-based wine bar, Pourtal, recently introduced their own version of Angels’ Share for their daily Happy Hour. Instead of losing a bit of wine, however, Pourtal loses a bit of their profits in order to contribute to a different local charity every month. Pourtal uses Enomatic technology, a system that fills wine bottles with gas to prevent oxidation. This allows wine bars and restaurants to offer more wines by-the-glass or even by-the-pour. Customers at Pourtal can load-up a card and taste a selection of 40 or so diverse wines around the bar. New Yorkers can try the Enomatic system at Union Square Wines.
