Summer at its finest
It may seem like an unlikely combination however watermelon and tomatoes are actually a perfect pairing of sweetness and acidity. At the 2006 Aspen Food and Wine Classic José Andrés, the world famous Spanish chef, prepared watermelon and tomatoes 10 ways in 45 minutes. An easy way to test out this dynamic duo at home is in a fresh summer salsa. Chop up 1½ cups of each of your favorite summer tomato and ripe red watermelon. Dice up ¾ cup red onion, perhaps a serrano chile if you like some heat, 1/4 cup each of chopped fresh cilantro, mint, and parsley. Combine all ingredients in a bowl with ½ cup lemon juice and season with salt. It makes a wonderful accompaniment to grilled fish or chicken tacos.
