The weather is warming up and it’s officially summertime. And my office has been besieged by books offering to show at-home cooks how to make mouth-watering salads, or how to lighten up for the heat—‘tis the season. But I just received an amazing book that really turned me on - Sausage: Recipes for Making and Cooking with Homemade Sausage by Victoria Wise from Ten Speed Press. There are seventy-five creative recipes included in this book, and not one of them involves fiddling with casings that may turn you off to sausage altogether. No special equipment is required, and ingredients are familiar. I’m particularly fond of Wise’s inclusion of a great Creole Gumbo recipe, Shepherd’s Pie with Lamb Sausage and a savory bread pudding with English sausage. Sausage is available for $23 in bookstores and online.
