To have and to hold

So, you’ve decided to start a wine collection. Proper wine storage is not to be taken lightly. While you may not be lucky enough to have a separate wine cellar in your house, it doesn’t mean that you can’t treat your precious Cabernets and Syrahs well. Just follow a few basic rules: Keep wine in the coolest area possible. It’s best if temperatures don’t get above 62 degrees. Store wine on its side so that the cork is kept moist. As corks dry out, they can shrink and allow air to damage your treasure. An absence of light will also help maintain your collection. Some humidity is also helpful to keep labels from cracking and peeling. You can remove the guesswork by investing in a refrigerated wine cooler.
