The perfect accompaniment to a great glass of wine

A wonderful wine can be enhanced by the flavors and aromas of a good cheese. One of my favorite ways to enjoy cheese is in the classic Italian cracker called a frico. To prepare a fresh batch of fricos preheat your oven to 375 and line 2 large baking sheets with parchment paper. Mix 1 cup of shredded parmagiano or asiago cheese with 1 tablespoon of flour. Then spoon the cheese mixture by generous spoonfuls onto the prepared baking sheets, allowing approximately 2 inches between mounds. Bake the fricos until deep golden and crisp; approximately 10-12 minutes. Remove them from the oven and voila! You have delicate, crisp, Parmesan crunchies. Pair your fricos with a chilled chardonnay or a nice hearty Amarone.
