A new star in Vegas
The dazzling new ARIA hotel in the new Las Vegas City Center has sixteen exciting restaurants. I dined at SAGE the large and beautiful new place featuring the refined American food of Chicago chef Shawn McClain. Start with lovely wagyu beef tartare with caper aioli, roasted sweetbreads with pork belly, or a breathtaking foie gras custard brûlée. Excellent pastas can be a mid-course or a main course. Try the agnolotti packets stuffed with Maine lobster and sweet corn or the unctuous risotto studded with butternut squash and Jerusalem artichokes. Main courses include Belgian ale-braised short rib, excellent New York strip steak and tender Iberico pork loin with smoked dates and confit. Service is friendly and professional and the wine list is very good. SAGE at ARIA is an important new star in Las Vegas.
