The FDA has made some regulations in America that have the effect on the flavors of certain foods. I’ll try not to take a stance on them, but the fact of the matter is, rules about the aging process means that it’s hard to get a proper brie here in America. The classic French cheese (the kind with the soft white rind and the fragrant odor) is much beloved, but misrepresented, stateside, until now. Le Chatelain is a French cheesemaker that uses pasteurized milk to create a cheese that tastes incredibly similar to the French raw-milk standard. The cheese even won a gold medal this year at France’s biggest food competition. Le Chatelain brie is available in most major supermarkets—ask your cheesemonger. It’s really delicious!
