Upgrade your Hanukah
Latkes are a staple of the festival of lights. Often these delicious little pancakes are served with applesauce and sour cream. Canned applesauce just never tastes the same as fresh applesauce. So this year upgrade your Hanukah and make fresh apple sauce. It is easy to prepare and you can freeze your applesauce for up to one month. Get 3 pounds of good fresh apples. Peel, core and quarter your apples. Add the apples to a large pot along with the juice of one lemon, ¼ cup brown sugar and 1 cup of water. Cover the pot and bring it to a boil. Reduce the heat and let simmer for 30 minutes. Remove the pan from heat and mash the sauce with a potato masher. Enjoy immediately with homemade latkes or store in containers Refrigerate or freeze.
