You can't go wrong with Blue
If you're looking for a rich and creamy dish to compliment your holiday dinner, try this recipe for blue cheese mac and cheese. Begin by cooking one pound of shell pasta. For the sauce melt 2 tablespoons of butter in a saucepan add ¾ cup of flour and cook for one minute, stirring constantly. Whisk in 2 cups of whole milk and 1 cup of whipping cream; simmer, whisking occasionally. Then reduce heat and add 3 cups grated cheddar, 1 ½ cups crumbled blue cheese, a dash of white truffle oil and 2 Tablespoons of dry, white wine. Whisk until melted. Mix pasta and sauce in a 13 by 9 glass baking dish, top with breadcrumbs and bake at 350 for 15 minutes or until bubbly. You will love this mac and cheese!
