Roasted Chestnuts

This time of year makes me crave fresh roasted chestnuts. When you roast chestnuts at home the fragrance fills your house with rich seasonal aromas. Roasting chestnuts is easy. Simply find the flat side of the chestnut and cut a large X with a small paring knife. Place the chestnuts on a baking sheet in a 425 degree oven for 35-45 minutes. You can peel and enjoy them straight out of the roasting pan or you can create a delicious chestnut pasta. Simply brown bacon in a pan until crisp. Remove some of the fat and add 2 cloves chopped garlic, chopped sage and peeled and chopped chestnuts to the pan and sauté until fragrant. Boil linguine noodles and reserve 1 cup pasta water. Toss cooked linguine with chestnut sauce, pasta water and Parmesan cheese. Enjoy the holiday season!
