One of the greatest challenges in the quest to eat healthier is the urge to snack. Here’s a recipe for a delicious white bean dip that will leave you satisfied and without guilt. Combine a 15-ounce can of cannelini beans or white beans with juices and 2 cloves of garlic in your CUISINART food processor to start. Then add the juice of one lemon and ¼ cup olive oil to the mixture. Process until smooth, season with salt and pepper. This yummy dip is wonderful with carrots and cucumbers or baked pita chips. It is high in protein and fiber yet low in fat and it satisfies the need to snack. Once you master this basic recipe you can jazz it up. Add chili flakes, rosemary, or even cilantro and cumin.
