Clear spirits infuse best—vodka, gin, light rum even Blanco tequila. Find your fresh herbs, spices, or fruits; wash them thoroughly and put them inside a clean, airtight jar (mason jars work spectacularly). Cover the flavoring with your chosen spirit, close the lid, and put in a cool, dark place for a few days—the fridge is a good idea. Shake 3 to 5 times a day, and do a taste-test after three days.
