Saving Spices

You…yes, I am talking to you. Do you have spices that have been sitting on your spice rack since Victoria Beckham was Posh Spice? Out with old and in with the new! Spices do not last forever. And every good cook knows your food is only as good as your ingredients.  While they don’t exactly spoil, spices, dried herbs, and extracts lose their potency as they age—and flecks of green in your food that serve no purpose aren’t garnish, they’re plain unappetizing. Check your spices every six months. Don’t store your spices above the stove, or anywhere where heat will degrade their quality.  Always keep them in a cool, dark space to avoid deterioration from light and heat.  And keep them away from moisture—the last thing you need is mold on your oregano!
