Villa San Michele, the former monastery nested amid terraced Tuscan gardens above Florence, has recently debuted these courses as an introduction to fine local fare. On September 10 to 13, guests can learn about risottos created with fall mushrooms, which add tremendous flavor and are found in the nearby Chianti woods.
