Corn Macque Choux
Corn is one of the most delicious summer vegetables and in Louisiana, chefs know their way around an ear of corn. One of the best Cajun dishes is a side dish known as Corn Macque Choux. To prepare, cut the corn off of 3 to 6 ears of corn making sure to scrape out as much juice as possible. Sautée 1 small chopped onion, 1 chopped bell pepper, and 2 diced small tomatoes in 2 tablespoons of butter over low heat. Add the corn into the onion mixture and continue to Sautée. Add salt to taste and ¼ cup milk. Some Cajuns like their Corn Macque Choux sweet; add ½ teaspoon sugar to taste if desired. Serve your corn macque choux as a side at your next barbecue. It looks great on the plate and it adds some nice spice.
