Feel like shaking up your morning smoothie routine? How about trying a silky mango Lassi? Lassi is a popular and traditional Indian yogurt-based drink which originated in the Punjab region of the Indian subcontinent. While traditional lassi are flavored with Indian spices, sweet lassi is blended with sugar. Here is my favorite recipe which uses honey instead of white sugar to bring out the natural sweetness of the mango. Dice two ripe mangos and process in a blender until smooth. Add 1 ½ cups of plain yogurt, 2 tablespoons of honey and a tray of ice. Process the mixture until the ice is crushed and the drink is frothy. Serve with a straw in a tall glass. Sprinkle with ground pistachio nuts for a touch of extra crunch and flavor. This may seem exotic, but its downright delicious.
