South Indian Cuisine
In the United States much of the Indian food we eat is Northern Indian, yet Indian food is incredibly diverse. South Indian food is delicious and incredibly fragrant since many of the dishes require unfiltered coconut oil in place of ghee. One simple and delicious dish is ulathu. To make, simply slice zucchini into finger-length batons and add to a pot with 1 teaspoon paprika, ½ teaspoon turmeric, salt and ¼ cup of water. Cover and cook at low heat until zucchini is partially cooked or until the water has dissolved. Remove the cover and add 3 tablespoons of coconut oil. Sautee the vegetable at medium heat, stirring frequently for about 10 minutes. Serve the ulathu with rice or chapati and curry and enjoy your tasty and cultural fare. Namaste!
