Food from India is popular in the United States, but most of the food we eat from this incredibly diverse cuisine is from Northern India. South Indian food is delicious and extremely fragrant since many of the dishes require unfiltered coconut oil in place of ghee – used in the north - which is clarified butter. One simple and delicious dish is ulathu. To make, simply slice zucchini into finger-length batons and add to a saucepan with 1 teaspoon paprika, ½ teaspoon turmeric, salt and ¼ cup of water. Cover and cook at low heat until the zucchini is partially cooked and the water has cooked away. Remove the cover and add 3 tablespoons of coconut oil. Sautée the vegetable at medium heat, stirring frequently for about 10 minutes. Serve the ulathu with rice and enjoy this tasty and slightly exotic dish. Namaste!
