Making your own pizza dough can be a pain and never comes out quite as light and crispy as it does at the pizzeria. Try a lavash, Armenian flat bread available in most markets. Lavash is similar to a tortilla but lighter and with a much crunchier texture. Used similarly to pita bread, lavash can also become a delicious vehicle for the pizza of your dreams. Simply preheat your oven to a mean 425 degrees. Drizzle your lavash with your favorite pesto sauce, top with sliced fresh tomatoes and plenty of mozzarella cheese. Finish with a drizzle of olive oil and salt and pepper. Bake the lavash pizza in the oven for 10-15 minutes or until it’s crispy and the cheese is melted. Cut into squares and serve warm.
