Wine with Turkey?
The logical answer to the turkey problem is white wine. Most of us learned "white wine with white meats, red wines with red meat." So white wine, right? Turkey is, after all, a white meat. Yes, turkey alone on a plate works with white wine. But then you add sweet potatoes, stuffing and cranberry sauce. A white wine could be drowned out by such an explosion of flavors. What this meal needs is a wine that can offer balance. I heartily recommend serving good red wines with the Thanksgiving dinner. Serve Burgundies, California Pinot Noirs, the new Beaujolais, and light, young Zinfandels. I'm also partial to Côtes‑du‑Rhônes and California Syrah or Australian Shiraz.
