If you've got a boatload of bird left over from yesterday: Try turkey hash. To serve 4 people you'll need 3 cups of turkey diced. Chop an onion finely and sauté it in butter until transparent. Add 2 cloves of minced garlic and 3 tablespoons of green or red bell pepper, finely chopped. When the vegetables just begin to brown, add the turkey and up to 2 cups of leftover stuffing or potatoes. Toss until well blended. Now, get creative! Salt and pepper to taste, then add chopped almonds or walnuts, pitted black olives, chopped parsley, seasonings such as chili powder, cumin, sherry or grated cheese. A good way to finish this hash is to mix 3 well‑beaten eggs with a half cup of grated parmesan cheese and 3 tablespoons of chopped parsley ‑ add to the hash and brown under the broiler.
