Like a good stock portfolio, a wine cellar should be diversified. Reds age better than whites, so most cellars are more heavily invested in red wine. Cabernet and Syrah are notoriously age-worthy. Merlot and Pinot Noir can also age nicely if well made. If you need reds for immediate consumption, stock up on fruity Zinfandels, mid-range Pinot Noirs or Italian Barberas, all of which can be consumed young. The great dessert wines of Sauternes and the best white Burgundies can age, but many whites, including Riesling and Sauvignon Blanc, are meant to be drunk young and fresh. Don’t lay these wines down except for short-term cellaring. Wines age at different paces, so it’s wise to buy three or more bottles of the same wine and then monitor its progress.
