Recently we have been hearing about the terrors of using trans fats- most commonly found in shortening and some margarines. According to recent studies trans fat consumption may increase the risk of heart attack and stroke. A trans fat-free shortening is available in stores made from palm oil. The upside is that the all-natural palm oil shortening makes pies light and flaky and tastes great. I thought it was the perfect trans fat-free substitute for shortening until I did more research. There are two big issues when it comes to palm oil. First, it is high in saturated fat, another big no no. And second, palm oil was recently called by the New York Times an “eco-nightmare” due to the deforestation occurring to make way for palm plantations. Maybe butter isn’t so bad after all.
