Chablis

The vineyards of Chablis, in the northern Burgundy region, are situated on the exposed rim of a gigantic limestone basin. It’s the limestone that gives Chablis its characteristic mineral notes. The most worthy Chablis bottlings come from the 40 premier cru vineyards and the seven grand cru vineyards, which lie in a single block on the south-facing slope above the village of Chablis itself. These wine are objects of passion for any collector, and well-made Chablis is one of the most age-worthy of all whites. Check out grand cru Chablis offerings such as the floral, elegant Joseph Drouhin Les Clos, or the creamy, mineral-laced Louis Moreau Grand Cru Les Clos. As one vintner puts it: “You can make Chardonnay practically anywhere in the world, but you can only make Chablis in Chablis.”
