Latkes are a staple of the festival of lights. Often these delicious little pancakes are served with applesauce and sour cream. Canned applesauce simply can’t compare to homemade applesauce, so this year upgrade your Hanukkah and make fresh applesauce. It’s easy to prepare and you can freeze it for up to one month. Get 3 pounds of good fresh apples.  Peel, core and quarter your apples. Add the apples to a large pot along with the juice of one lemon, ¼ cup brown sugar and 1 cup of water.  Cover the pot and bring to a boil. Reduce the heat and let simmer for 30 minutes. Remove pan from heat and mash sauce with a potato masher. Enjoy immediately with homemade latkes or store in containers and refrigerate or freeze.
