Super Flaky Crust
Combine 1 cup unbleached all-purpose flour, ¼ teaspoon salt and a pinch of sugar in the bowl of a food processor fitted with a metal blade. Add 6 tablespoons chilled butter, cut into ½-inch slices and 1 ½ tablespoons solid vegetable shortening. Pulse the processor on and off until the dough resembles coarse meal. Transfer the mixture into a bowl and sprinkle a little at a time with 2 tablespoons of water. Toss with a fork until the mixture comes together in lumps and holds together when pressed. If necessary, add a bit more water, but avoid kneading. If you don’t have a food processor, this entire procedure can be done by hand, but just be careful not to overmix the ingredients. Form the dough into a ball, wrap in plastic wrap and chill for at least 4 hours.
