Zero Dark Thirty: Smoky Chipotle Hummus with Garlic Bagel Chips
Epicurious has some great food and cocktail ideas tailored to this year’s Best Picture nominees. While they have a menu for all nine films, I’ll share with you a few selections—sorry, they’re probably a bit biased to my favorite films. For a great snack during the show, reach for Smoky Chipotle Hummus with Garlic Bagel Chips, inspired by Middle Eastern cuisine and Zero Dark Thirty, the manhunt for Osama Bin Laden. To make this easy and healthy hummus, combine two 15-ounce cans of drained garbanzo beans, ½ cup water, ¼ cup tahini—which is really just sesame seed paste—, 3 tablespoons plus 2 teaspoons fresh lemon juice, 2 tablespoons olive oil, 2 ½ teaspoons minced canned chipotle chilies, 1 large minced garlic clove and 1 ½ teaspoons ground cumin. Blend in a food processor until smooth. Add in 1 4-ounce jar sliced pimientos and process using on/off turns, until pimientos are coarsely chopped.
Transfer to a bowl and stir in 1/3 cup chopped fresh cilantro. Season with salt and pepper. Accompany with roasted-garlic bagel chips, or pita chips etc. if you so desire.
Don’t have time to make your own hummus? Just buy the store-bought kind and mix in some cumin and chipotle chilies to taste to still include your Middle Eastern flair.
