White Bean Dip

And if you’re looking for a healthy dip alternative, here’s a recipe for a delicious white bean dip that will leave you satisfied without the guilt. Combine a 15-ounce can of cannelini beans or white beans with juices and 2 cloves of garlic in your food processor—my favorite brand is Cuisinart— to start. Then add the juice of one lemon and ¼ cup olive oil to the mixture. Process until smooth, and season with salt and pepper. This yummy dip is wonderful with carrots and cucumbers or baked pita chips. It’s high in protein and fiber yet low in fat. Once you master this basic recipe you can jazz it up. Add chili flakes, rosemary, or even cilantro and cumin for a flavorful zing.
