Veggies for Meat Lovers

You may be an established carnivore, but that doesn’t mean you can’t enjoy your vegetables. In Arthur Potts Dawson’s cookbook, Eat Your Vegetables, produce is offered both as the center of a meal and as an accompaniment. The book includes a mix of classics, fast food dishes and show-off entrées – all which make the most of what’s in season. You may find that you haven’t quite heard of many of the book’s offerings. Even still, the gorgeous photographs are the perfect visual aids. Try the parsnip and shitake salad. It has a lovely creamy finish. The bread-crumbed fennel slices with lime and chili dressing is so hearty, you’ll almost forget you’re filling up on summer produce.
