Now is the season for entertaining over the grill. Side dishes and dessert can be prepared in advance, leaving the main course to be cooked over the coals or barbecue gas jets. But the successful cookout party requires careful planning and timing to achieve that appearance of relaxation and grill mastery. First, if you’re using charcoal, you must start the fire at the right time - usually an hour before you begin cooking. I've been to parties where the evening is spent standing around drinking wine while waiting for the coals to get ready. Don’t wait ‘til too late AND definitely don’t start too early.
