The radish is one of the most underappreciated vegetables out there. They are crunchy, colorful, spicy and quintessentially spring. Radishes are mostly relegated to crudité platters or an occasional salad or slaw. However, radishes are capable of far greater things. I suggest you experiment with cooking radishes. When cooked, they take on an entirely new and complex flavor; less bite and more sweetness. One of the best ways to enjoy cooked radishes is to roast them. Preheat the oven to 450 degrees and slice the radishes in half. Place the sliced radishes in a baking pan and drizzle them with olive oil, salt and pepper. Roast the radishes in the top rack of the oven for 20 to 30 minutes, or until you can pierce them with a fork. You’ll be surprised how delicious they are.
