Spice it Up
Today is National “More Herbs, Less Salt” Day. It’s an odd holiday, but I think the message is worthwhile. Adding fresh herbs to your savory dishes prompts a reduced use of salt, making your food better for you. Get in the spirit with Rosemary French Fries. Cut up Yukon potatoes and sprinkle with a mix of chopped rosemary, pepper, olive oil, and a pinch of salt. Stick them in the oven at 425 degrees for 15 minutes. Gently flip, and bake for another 10 minutes. Or try a simple Basil Pesto. Blanch 4 cups of fresh basil for 15 seconds. Blend it with ½ cup pine nuts, ½ cup Parmesan, 2 garlic cloves, and ¼ cup olive oil until smooth. Add salt for taste, and toss it with your favorite pasta. More herbs. Less salt.
