Grilling is a quintessential summer activity. What better way to celebrate the season’s last holiday than with a cookout? Kick up your Labor Day with Food Network’s Spicy Lemon Shrimp Skewers. Zest 4 lemons and blend with 3 tablespoons of salt. Juice 2 lemons into a bowl. Add 1 finally chopped lemongrass stalk, 3 tablespoons olive oil, 2 cloves minced garlic, 1 tablespoon fish sauce, 2 teaspoons brown sugar, 1 teaspoon lemon salt, 2 tablespoons chopped fresh mint, and 3 tablespoons of your favorite chili sauce. Cut through 30 large shrimp shells along the outer curve, leaving the shells on. Remove veins. Rinse the shrimp, and toss in your lemongrass marinade. Thread the shrimp onto skewers, and grill until the shells begin to char. Sprinkle with lemon salt to taste. It’s a crowd favorite!
