This time of year makes me crave fresh roasted chestnuts. Roasting chestnuts at home is one of my favorite family activities and fills the entire house with rich seasonal aromas. Simply find the flat side of the chestnut and cut a large X with a small paring knife. Place the chestnuts on a baking sheet in a 425 degree oven for 35-45 minutes. You can peel and enjoy them straight out of the roasting pan or create chestnut pasta sauce. Brown bacon in a pan until crisp. Remove some of the fat and add 2 cloves of chopped garlic, chopped sage and peeled and chopped chestnuts. Sauté until fragrant. Boil linguine noodles and reserve 1 cup pasta water. Toss cooked linguine with chestnut sauce, pasta water and Parmesan cheese. It’s truly a special holiday treat!
