Commemorate the New Year with a Champagne Cocktail If you’re entertaining tonight, ring in 2014 tonight with a Kir Royale. With 4 oz. framboise, chilled Brut Champagne and 4 lemon twists for garnish, your Kir Royale-filled flute is a simple way to keep your guests’ glasses full. Another worthy mix is the Seelbach Cocktail, first served in the pre-Prohibition era at the Seelbach Hotel in Louisville, Kentucky. Fuse 2 oz. bourbon, 1 oz. Cointreau, 14 dashes Peychaud’s bitters, 14 dashes Angostura bitters, chilled Brut Champagne and 2 orange twists for garnish. If all else fails, mix 4 oz. orange juice, chilled Brut Champagne and 4 orange slices for garnish. The ever-simple Mimosa never disappoints.
