Did you know that broccoli has a season? We assume that vegetables like broccoli and cauliflower are the same year ‘round, however they have a season. This tree-like veggie grows best in cold conditions making them perfect to eat now. Broccoli was brought to the new world by the Italians and at the time was one of their favorite vegetables. Although considered an exotic vegetable by early Americans, it is now an American staple. One of the simplest ways to enjoy this winter veggie is in a soup. Simply boil 1 cup potatoes, 2 cups chopped broccoli and ½ an onion, chopped, in 4 cups broth. Simmer until the vegetables are tender. Purée the soup in batches in your CUISINART food processor and season with salt and pepper. Topped with shredded cheddar cheese, this broccoli soup is comfort in a bowl.
