Mix some good with the bad with vegetables and pizza — and no, I’m not just talking about veggie toppings. Try your hands at a cauliflower crust. It’s a pizza must! This grain-free crust is healthy, yes, but it’s also rich, delicious, and surprisingly easy to make. To begin, line a baking sheet with parchment paper, and preheat the oven to 425 degrees Fahrenheit. Grate ½ a large head of cauliflower until you have two cups of cauliflower crumbles. Place in a large bowl and microwave for seven minutes, or until soft. Let cool. Mix in one egg, 1 cup of shredded mozzarella cheese and Parmesan cheese, and salt and pepper. Pat into a large round pizza pan, sprayed lightly with nonstick spray, and bake for 10-15 minutes, or until golden. Top the pizza with sauce and cheese and bake in the oven for another 10 minutes, until melted and bubbly. Sprinkle with fresh basil, and enjoy.
