Latkes are a staple of the festival of lights. Oftentimes these delicious little pancakes are served with applesauce and sour cream. But canned applesauce simply can’t compare to homemade applesauce. So this year, upgrade your Hanukah and make fresh applesauce. It’s easy to prepare, and you can freeze it for up to one month. To make, get 3 pounds of good, fresh apples. Peel, core and quarter the apples. Add them to a large pot along with the juice of one lemon, a quarter cup of brown sugar and 1 cup of water. Cover the pot and bring it to a boil. Reduce the heat and let simmer for about 30 minutes. Remove the pan from heat, and mash up the sauce with a potato masher. Enjoy immediately with homemade latkes, or store in containers and refrigerate or freeze for a later treat. Happy Hanukah!
