Tomorrow is the big day, and I’m guessing you have a crowd to feed. Nothing tastes better with those delicious Christmas day pancakes than perfectly scrambled eggs. The secret to this wintertime egg dish is twofold – low heat and a fair amount of butter. These eggs come out delicious and light, unlike those rubbery things you find at diners. First purchase your favorite large and preferably organic eggs. Break six eggs into a bowl, add approximately a quarter cup of whole milk, and beat gently. Heat a large pan on low heat and melt 2 tablespoons of butter into the pan. Once the butter is melted, add the eggs. Now the trick – resist the urge to turn up the heat. Cook on low heat, stirring constantly until the eggs are just cooked. This can take as long as 20 minutes. Season with salt and white pepper, and enjoy. Happy Holidays!
