Cherry Tomato Vinaigrette
Did you know that cherry tomatoes have a season? True, these petite red gems are available year round, but the warm weather plant peaks at the beginning of summer. Today I want to share a quick, incredibly tasty cherry tomato vinaigrette recipe that can spruce up even the blandest bed of leaves. To begin, heat 1 tablespoon of olive oil in a saucepan over medium heat. Add 1 shallot and cook, stirring often, until softened. Add in a pint of cherry tomatoes, half of them halved and the other half whole. Stir occasionally. When the juices begin to release, mash a few tomatoes with a spoon. To finish, add 1 tablespoon of red wine vinegar and 2 tablespoons of olive oil. Season with salt and pepper, and add chives before plating. This dressing can be served chilled or warm. Top off a pork roast, or toss in a salad. Either way, your summer palate will thank you.
