But that’s ignoring the entire sub-genre of cold soup, a flavorful foray into fresh eating that is popular around the globe. As summer tomato season moves into high gear, here are some tips for enjoying the chilled Spanish delicacy GAZPACHO!
Peel and purée cucumbers, tomatoes, onions, green bell peppers, and garlic in your food processor to make your vegetable base. Spoon into a bowl, add tomato juice, vinegar, olive oil, and salt and pepper – all to taste. Mix well, and chill before serving. If you want a less watery soup, purée in a few slices of white bread. It sounds strange, but it makes for a hearty, delicious dish.
