Corn is more than a simple staple. For one, it’s juicy, and can absorb other flavors beautifully. With very few calories, tons of nutrients, and all the fiber you could want, it’s no wonder that Ancient MesoAmerican cultures considered corn to be synonymous with life. Here’s a way to enjoy corn with a Latin kick. Grill a few corn cobs, still in their husks, for 35 minutes so they are just barely charred. While they’re grilling, mix six tablespoons of mayonnaise, a minced garlic clove, salt and cayenne pepper. Once your corn is done, slather that mixture on and roll the cob in Cotija cheese to really heighten the Latinisation. Or, for a quick snack, cut a sliver of butter over a corn cob and microwave for thirty seconds. You’ll have no complaints.
