Tomato Watermelon Salsa
Tomato meets watermelon – in salsa form! To make this sweet and savory salsa, dice ¼ of a medium sized watermelon into small cubes, as well as half a red bell pepper and half a cucumber, both peeled, seeded and diced into even smaller cubes than the watermelon. Finely chop 1 jalapeno, 1/3 of an onion, 6 basil leaves, 4 mint leaves, and about 1/3 cup cilantro. Once your cutting board resembles a painter’s palette, add your ingredients to a large bowl. Squeeze in the juice of 1 lime, and drizzle in 2 tablespoons of honey. Add a dash of salt to taste, and stir. Cover your bowl and let it sit in the fridge for a couple hours before serving. Set it out at parties for a fresh chip accompaniment, or dollop this on grilled white fish!
