Broccoli & Cheese Soup
Did you know that broccoli has a season? We assume that vegetables like broccoli and cauliflower are the same year ‘round, but these little trees do have a season. This forest green veggie grows best in cold conditions, making them perfect to eat now. Broccoli was brought to the new world by the Italians and at the time was one of their favorite vegetables. Although once considered an exotic vegetable by early Americans, it is now an American staple. One of the simplest ways to enjoy broccoli is in a hot soup.
Simple Broccoli Soup
• 1 cup of potatoes
• 2 cups of chopped broccoli
• ½ a chopped onion
• 4 cups of broth (your choice)
• Shredded cheese
Boil the vegetables in 4 cups broth. Simmer until the vegetables are tender. Purée the soup in batches in your CUISINART food processor, and season with salt and pepper to taste. Top with your choice of shredded cheese and enjoy!
