Most commonly referred to as garden beets, this root vegetable is a rich source of antioxidants and nutrients. But don’t let the healthy label chase you away. Beets are delicious! Typically eaten warm – grilled, boiled or roasted – beets also make a beautiful addition to salads. Serve warm with pears, coarsely chopped almonds, baby arugula and splashes of balsamic vinegar and olive oil for a really lovely blend of flavors. Or garnish cold plates with raw, shredded beets. If you’re less inclined to wash, cut and cook from scratch, buy packaged boiled or pickled beets from your local market. Simply open and serve. Try a quinoa and beet dish – toss cucumbers, parsley, cilantro, cherry tomatoes, red and yellow bell peppers, cayenne pepper, lots of lime and olive oil in a cup of boiled quinoa. Garnish with beets for a lush delight.
