It’s a bit cruel that every year our New Year’s resolution to lose weight falls smack dab in the middle of winter. Everyone needs just a little bit of hibernation padding to keep warm, right? WRONG! I’m trying to stand firm myself. But instead of subscribing to deprivation, I’m upping my intake of fresh fruits. The persimmon is a huge foodie trend, and happens to be my favorite winter fruit. There are a few kinds of these edible gems. Taking a reddish-orange color, they look like flattened tomatoes. Persimmons come in two flavor profiles, astringent and non-astringent. If astringent persimmons are still hard, they can be quite tannic. Softer astringent persimmons yield a nice tart taste. They’re absolutely delicious in salads and puddings, particularly when Persimmons get soft, ripe, lush and custardy. That’s the way I like them.
